Mead is an alcoholic beverage made by fermenting a honey and water solution and is arguably one of the oldest fermented beverages. Thanks to the revived interest in home brewing, it is undergoing a resurgence in popularity.[1] One Alaska meadery, Celestial Meads, has won numerous awards at the Mazer Cup International competition,[2] with 9 medals in 2010 alone. Alaska has numerous indigenous pollinators,[3] including mosquitoes,[4] but none produce honey. The European Honey Bee is imported solely for that purpose. The hives require significant support, especially during the winter when the beehive must be insulated. There are a wide variety of flowering plants in Alaska that can be the source of the honey, from fireweed to the non-native dandelion. Each flower lends its own unique flavor to the honey produced by the hive. Fireweed honey is the most common monofloral honey produced, as it is one of the most common, and distinctive, flowers of Alaska. Meads made with Fireweed Honey are produced by the Ring of Fire Meadery,[5] in Anchorage, the Bear Creek Winery[6] in Homer, and the Alaska Wild Winery in Kodiak,.[7] The Ring of Fire and the Celestial Meadery[8] in Anchorage, Alaska, produce meads made with other Alaska fruits, berries and flavorings, such as crabapple, rhubarb, birch syrup, currants, blueberries, etc. Many of the meads produced in Alaska are made with imported honeys, spices, and other flavorings.[9] Meaderies
