He served as the head football coach at Nicholls State University from 1981 to 1986 where he had a record of 39–28–1. He guided Nicholls State to its first appearance in the NCAA Division I-AA playoffs. From 1987 to 1989, he was head football coach at McNeese State University with a record of 13–20. He had a career college football coaching record of 52–48–1. Jackson is an alumnus of Nicholls State University. He was an assistant coach at Northeast Louisiana for two seasons.
