}}Aprapransa is a local dish of the people from the Eastern Region of Ghana.[1] It is basically made from roasted corn flour, cooked beans together with other ingredients (onion, tomatoes, fermented salted fish, smoked fish, palm oil, pepper, salt and crab).[2][3] Its a food that is served on special occasions and is feared to go extinct.[4][5][6]

Mode of serving

Aprapransa is not a food that is commonly found on the streets of Ghana or is prepared every day in the house. It is usually served by the Akan tribe on special occasions such as marriage ceremonies, naming ceremonies, birthday celebrations, family cookouts, etc.[1]

Ingredients

  1. 2 cups heaped roasted corn flour
  2. 1 serving spoonful palm oil
  3. 2 medium sized tomatoes
  4. 1 medium sized onion
  5. 1 small piece smoked  fish
  6. Fermented salted fish (momoni as locally called)
  7. ½cup of beans
  8. Pepper and salt to taste
  9. Crabs &91;7&93;

Alternate Ingredients

  1. Palm nut extract
  2. Dried fish( Any meat can be added if preferred)
  3. Crab(for garnishing the meal)
  4. Roasted cornmeal flour
  5. Vegetables ( onions, pepper, ginger, garlic, tomatoes)
  6. Salt and seasons of choice&91;8&93;

Method of Preparation

  1. Wash and  boil beans till tender and set aside
  2. Put palm oil on fire
  3. Add sliced onion to fry till brown
  4. Add momoni(Salted fish) and allow to fry for 5minutes
  5. Add ground pepper and tomato and then fish
  6. Allow to cook whilst stirring  occasionally
  7. Add water, cover and allow to boil
  8. Add boiled beans
  9. Add the roasted corn flour and stir till well cooked
  10. Remove from fire and serve hot – Garnish with cooked crabs&91;7&93;
How to make roasted corn flour

In the absence of already made roasted corn flour, one can prepare in these two easy steps:

  1. Fry dry your preferred quantity of maize in a saucepan (fry until brown).
  2. Take it off the fire and allow it to cool.
  3. Pour it into a clean container to be milled or blended until very smooth or fine.&91;9&93;

Alternate Method of Preparation

  1. Cut and wash the meat or fish to be used
  2. Season with your choice of seasons, add blended onions, garlic, ginger if preferred
  3. Add salt to taste
  4. Allow meat or fish to cook for 5-10 min
  5. Blend tomatoes and pepper and (more onions for flavour)
  6. Add to the cooked meat
  7. Dilute palm nut extract with warm water and bring to a boil.
  8. Strain the palm nut extract to meat.
  9. Add crab after about 5 mins.
  10. Allow soup to boil/ cook for 15- 25min

Normally ready when the palm oil separates to the top of the soup.

Palm nut soup ready, proceed to Apraprnasa preparation

  1. Scoop about 8 ladles into a separate saucepan
  2. Add about 9-10 tablespoonfuls of the cornmeal gradually and one spoonful at a time
  3. stirring the mixture at the same time continuously till desired pasty texture is achieved and all lumps are completely dissolved.
  4. Add one laddleful of soup and allow to cook for a couple of minutes.
  5. Serve into your bowl, garnish with the crab on the top.&91;8&93;
