However, be careful, if you suffer from an allergy to peanuts or other nuts, as you may experience allergic reactions similar to sesame seeds.[3] The problem appeared with the industrial revolution. The production became massive and for this it was necessary to reduce the time and cost in the processes, which gave rise to other methods of oil extraction such as the use of heat and solvents. This change in the process in addition to achieving a high yield - more oil was extracted from each olive - allowed lowering the final price. The consequence: the oil went from being highly nutritious to being a caloric food and in many cases harmful to health. In order for an oil to be labeled as Cold Pressed, the regulations require that thermometers be installed in the mill to record the temperature during the entire extraction process. Said temperature is recommended to be lower than 27ºC in order not to decompose the fatty acids contained in the oil and to avoid the dissolution of waxes and other substances. Normally, when we buy an oil we do not usually pay attention to this kind of details, but we should take them into account because not all extra virgin olive oils are cold extracted.
