About Hidden Spring Vineyard

Hidden Spring Vineyard is an English grower and producer of quality still and sparkling wines made from Chardonnay, Pinot Noir, Pinot Meunier, Bacchus and Pinot Gris. The vineyard has gently south facing slopes of clay over sand. The site lies between 64 and 78m above sea level and is protected by mature oak trees on the perimeter.

An onsite winery was built in 2018 and for the first time in the vineyards history the journey from grape to glass was on site.

The purpose built winery combines state of the art temperature controlled steel fermentation tanks with more traditional barrel fermentation and ageing. The house style is refreshing, crisp and elegant wines that are hand-crafted to express the fruit and flavours of this quintessentially English terroir.

History

Located in the East Sussex village of Horam, the site which was formerly known as Huggets Orchard was renamed as Hidden Spring Vineyard in 1986. The then owners planted mainly German varietals such as Ortega, Dunkelfelder and Muller-Thurgau but were also well known for their quality Pinot Noir. A pioneer of English winemaking, Hidden Spring produced many award winning wines and were noted for their distinctive art-deco labels. They courted controversy with a particularly racy label for their "Ginger Nun" wine but found success with outlets in London including Fortnum and Mason where they produced wine under the Fortnum's own label.

In the 1990's new owners further developed the vineyard building a strong relationship with John Lewis. In 2006, raising money for cancer research, a rock concert called Vibes from the Vines was held within the vineyard.

From 2008 until 2015 when the current owners took over, the site was run as a campsite and gradually the vines were grubbed up to make way for caravan and tent pitches and related infrastructure. By 2015, there were no vines left on the site and grape growing and winemaking had ceased. The site shop had fallen into disrepair.

In 2015, new owners took over the site and set about restoring the vineyard and 25,000 vines were planted in 2016 over just over 5ha (12.5 acres). The vines are managed using modern machinery and trained to steel trellising with a 2m row width and 1m inter vine spacing to control vigor. A first harvest in 2018 produced 9 tons of grapes and combined with grapes purchased locally yielded over 10,000 bottles of still and sparkling wines for release in 2019 and beyond.

Together with a new winery, the site now has its own visitor centre[1] where it hosts wine tasting and tours of the vineyard and sells wine from local vineyards in the Horam area.

Hidden Spring Vineyard is a founding member of Vineyards of the Sussex Weald, a cluster of vineyards centred around the town of Heathfield an located in or near the Weald area of outstanding natural beauty (AONB).

Site and Winemaking

The vineyards are located on a gentle south facing slope between 64m and 78m above sea-level allowing frosty air to drain away and maximising the amount of sunlight and warmth. Average temperatures during the growing season are around 14C which is on the margin of cold-climate viticulture.

Harvest usually begins in mid-late September through to late October when the grapes have ripened sufficiently. Whole bunch pressing is used to maximise juice quality for both still and sparkling base wines and the cuvee and taille are fermented separately to allow for interesting blending options. Several months of lees ageing on the fine lees together with regular lees stirring (battonage) are used to increase body and texture in the wines as well as add some subtle tertiary notes. Prior to bottling, filtration, cold stabilisation and final adjustments are made and bottling takes place in the spring after harvest.
