Hitchman & Co. Limited was a Brewers, Malsters, Wine & Spirit Merchants Firm established in 1796 by brothers James Hitchman (1773-1830) & William Hitchman (1781-1838).

In 1796 James Hitchman married Sarah Lock Simkins, the daughter of William Simkins who died the same year, leaving an inheritance to the couple. Following James Hitchman's death on 26 May 1830, the firm was was taken over by his son William Simkins Hitchman (1799-1881), the First Mayor of Chipping Norton Borough following the 1835 Municipal Corporations Act. W.S. Hitchman commissioned the building of the Brewery and Malthouses in Albion Street in 1849, and subsequently extended his wealth by acquiring Chapel House Farm and The Tally Ho Quarry at Blockley, Gloucestershire, as well as becoming a Lessee of the St Ebbe's Gas Works. Using his substantial wealth, William built his country residence Kitebrook House at Moreton-in-Marsh, Gloucestershire, now Kitebrook Preparatory School [https://www.kitebrookhouse.com/], where he subsequently died in 1881. William's son, Alfred William Spence Hitchman (1846-1912), assumed control of the firm until 1890 when he sold the business to a Limited Company. The Brewery Premises & Public House was sold for £47,180, Book Debts & Loans £12,500, Stock- Beer, Malt, Hops, Wines & Spirits. Horses & Vans £16,500 for a total of £76,180, equivalent to £6.25 million in 2017  . A.W.S. Hitchman remained chairman, yet preferred to spend his days pursuing sporting activities, founding the Chipping Norton Rugby Football Club. In later years, Alfred moved to Weymouth, Dorset, where he bough a yacht and named his residence Kitebrook. Suffering a sailing accident when returning from New Zealand in 1910, Alfred's health declined until his death on 9th March 1912 [https://www.thegazette.co.uk/London/issue/28609/page/3626/data.pdf], his remains being buried at sea.

Hitchman & Co. Ltd. were taken over by Hunt Edmunds and Co. Ltd. of Banbury in 1924, operating by the name of Hunt Edmunds Hitchman Co. Ltd. as a holding company. The Chipping Norton brewery remained in operation until the supplementary budget of 1931 increased beer duty, it was subsequently closed in 1932-1933 when production was moved to Banbury, Oxfordshire. Hitchman & Co. Limited's Brewery had for several decades been a major employer in Chipping Norton, and its closure was a major blow to the local economy. The brewery remained in use as a Mineral Water Factory until 1968 until it was demolished in 1970. The offices of Hitchman & Co. Ltd remain in Chipping Norton.
