Marcus Medina (Born ______) is an award winning Mexican-American Chef current based in Beijing, China, where he works as the Executive Chef for the Q Mex group. {1} As a foreign chef in China, he has appeared in multiple food articles and tv programs with a big presence in the food industry in Beijing. Most recently Marcus was invited to the stock market launch of Meituan-Dianping to represent Q MEX and was the only representative coming from Beijing.

Early Life

The story of Marcus Medina begins in east LA. Born and raised there, from an early age he would frequently travel to Mexico where his family had a ranch. He is one of two brothers, him and his older brother Marty grew up together with their parents. Marcus’s parents met in a small town in California and moved to east LA together. They stayed there for a few years and ended up in a small farming community in California.

Marcus’s great great maternal grandmother was what is referred to as a ‘dejan’ which is closely related to the pueblos indians. His grandfather from his mother's side was a fairly successful rancher and is the one who owned the ranch they would visit in Mexico.

Pre-Cooking Career

Right out of high school, Marcus went to London for school to complete his A-level studies. 2 years in London studying English & European History. From there he travelled to Paris for half a year to study French.

During his stay in Paris around 1978, he was working as a waiter and cook for various restaurants. One place he worked at was a Mexican Peruvian restaurant called ‘Incamaya’ as a cook. This was his first experience seeing people eat Mexican food outside of Mexico or California.

Marcus also had an interest for Acting. He was a theater fanatic in high school and when he went to London, he joined an amateur acting theater group. After his studied he returned to his family back in East LA.

Career

California (1982 - 1989)

Marcus’s first restaurant was in Los Angeles, Rachels, the beginning of his cooking career. Rachels, set up by Marcus and his brother (bring in the Medina Brothers as term), was one of the first Mexican restaurant in LA that sold mission burritos. At time time they both managed the restaurants, but after a couple years they both wanted to get out there and explore the world.

The Medina Brother would take turns taking care of the restaurant. While one brother was stayed at Rachels, the other would go off on adventure tours to learn and explore. Marcus went to South America for his adventures, exploring town to town, and ended up out in the sea on a crab fishing boat as a cook. [1]

When Marcus returned, his brother Marty would take his leave and he went on cruise ships out on the Caribbean. When Marty went back to California he wanted start something new, he convinced Marcus to travel somewhere new to cook where they didn’t have Mexican food.

Culinary School (1985 - 1986)

Marcus knew he needed more experience and he was determined to learn the culinary arts, so he went to a culinary school in New Mexico to study under Patricia Quintana. Patricia Quintana is a recognized international cook in Mexican gastronomy and one of the first people to recognize that Mexican Cuisine could be served at high levels worldwide. Marcus spent a year in culinary school studying under Patricia and afterwards returned to Los Angeles to continue cooking at Rachel’s, improving their menu and making it better with everything he had learned in Mexico.

New York (1989 - 2006)

From Los Angeles he and his brother took everything they had and went to New York to open up their very own Taqueria. They wanted to find a new market for Mexican food where they could start fresh.

The Medina brothers were the first people to bring mission burritos to New York. In the summer they had nothing but a food stand set up in Brooklyn to see if people were open to Mexican food. They already had enough to start a restaurant but they rented a food cart first as an experiment serving tacos, quesadillas and burritos. Feeling confident in the new market and their cooking, by the time winter came they already had their first Taqueria set up.
