Thai Royal Cuisine or foods for the upper. It originated during king Naria. It is considered one of the most difficult league of art cuisine because every step has to be delicate and neat. The taste and aroma have to be strong. Thai royal cuisine is mostly engaged with a sweet flavour. During the reign of the King Chulalongkorn has created many more menus, and was the first to have the recipe written down in every platform. Including poetry, books, songs, and Thai gospel[1]

History Of Thai Royal Cuisine

Thai royal cuisine is considered to have a mellow taste in every dish.

it can only be served and made in the palace.[2] Those who try to publish, copy or remake the dish will be punished, if found, because it is considered to be eaten by only the ones inside the palace and not the peasant. even-though the menu might be the same, but how it was made or served is totally different. The green curry for normal people will use pork with bones, however, in the palace, it is used with chicken cut into bite-sized. The royal cuisine has to be cooked by women that is inside the palace and have offered her oneself to the palace called kreung ton ({{lang-th|เครื่องต้น}}, {{RTGS| kreung ton }})

Serving

Normal Thai cuisine was traditionally eaten by hands, however, in the palace people used to eat by hands but later change to eat with utilities; with fork and spoon, because of the foreign influenced.

making the cuisine must be neat and use only fresh ingredients with complex ways of decorating. A French man during King Naria made a journal quoting that the food is the same as villagers food, but it was beautifully presented in such ways that the fish bones have to be removed, vegetables are boiled and cut into bite-sized. Fruits have to be carved into a Thai traditional pattern, or Lai Thai. Carving fruits must be taught in the palace from generation to generations.[3]

Plate Decorations

Probably one of the charms for royal cuisine is the plate decorations. Which means that present food in a way that it is appealing to the eaters, plate decorations also shows that the women inside the palace have the knowledge to be able to please their master.

Every plate that is served must have carved vegetables, or fruits to show the complexity techniques, and also makes the food look more delicious. In each plate, they must be up 5 different colours of seasonal vegetables. If the plate doesn't serve with vegetables then the side dish must have up to 5 different colours. The main dish in a plate must be signed, to show that this is the main dish. Most Thais eats curry as their daily meal, so mostly the main dish is curry but in filling in a pineapple, pumpkins, or fruits that could make a bowl become significance. If the dish doesn't have a curry, it will most likely be fish, so it must take all the bones out because Thais believed that flipping the fish would make the ship crashes. The fish that is used is mackerel, fried only and eats with Kapi. lastly, the dessert also called dessert ({{lang-th|เครื่องว่าง}}, {{RTGS|kreung wang}}). is served only one type, but a Lot of it. The dessert must be nicely decorated, most of the colours are in one colour schemes, placed in shapes, or stack on top of each other. One of the most famous desserts is The golden thread, it is actually not fully a Thai dessert because Thai dessert doesn't include eggs in the ingredient, because eggs are meant to be an ingredient in foods. Dessert-like Golden thread will be stacked up on a plate along with other sweets that have the same colour, Pantone. Another famous way in plate decorating is including plants and flowers as decorations.

The plate itself in the decoration also has to be nicely decorated with Thai motives in colour blue. Thai people, they believe that the colour blue portrays power and strong, for the king. The plate is decorated with a lot of different motives around the outer corner of the plate, and leave the middle to be pure white, so that the food that is placed will dominate the whole plate.[4]

Ingredients

Because of the area where Thailand is located, the food and ingredients are mostly hot, spicily herb and has a distinctive smell because it is in the tropical region. Making a dish, Thai people need to consider having a lot of ingredients.[5] It also uses only fresh rather than dried herbs to prepare food.

Thai cuisine consists of many different ingredients (({{lang-th|ส่วนผสม}}, {{RTGS|suan phasom}}), and ways of preparing food.

Main ingredients of Thai Royal cuisine is mostly; starches—— noodles and rice, sauces, vegetables and fruits, and desserts.

Starches

The Thai cuisine main component is Rice (kao), Thai people give the importance to having rice in every meal. Rice is very integral in each meal that the greeting phrase to a lot of Thai people to another is " Have you eaten yet?" which translate into "Kin kao hrue yang"(({{lang-th|กินข้าวหรือยัง}}, {{RTGS|kin kao hrue yang}}). There's also a Thai traditional about harvesting rice called the ploughing ceremony which is a tradition that the people worshipped the god of rice by using a cow to harvest the crops. They also give cows different types of rice for them to consume as a prophecy which species of rice the farmer should plant year round. [6] Another important starches are noodles, even though Thais don't ingest a lot of noodles contained food as their fundamentals, noodles are very popular among the starches. The most popular types of noodles product are Khanom chin, made from fermented rice, normally served with spicy curry paste, or Thai salad. Thai noodles also take inspired by Chinese cuisine, and adapt to Thai taste called kuait iao which comes into four varieties of noodles; senlek ({{lang-th|เส้นเล็ก}}, {{RTGS|sen lek}}), senyhai ({{lang-th|เส้นใหญ่}}, {{RTGS|senyhai}}), senmi, and bah mi ({{lang-th|บะหมี่}}, {{RTGS|ba mi}}). These noodles create Thai famous dish pad Thai.

sauces

The main seasoning in Thai royal cuisine is fish sauce or Narm pla, it has a very distinctive smell of fish and normally uses to make dishes saltier, Thai people preferably using fish sauce rather than seasoning with it with salt because the fish sauce gives both taste and smell to the food. Another famous sauce and paste is narm prik kapi, which is mostly used to eat with fried vegetables or fried fish.

Fruits

Part of the Royal Thai cuisine diet are fruits, carved into motives, usually served in large plates. The main decorations in Thai royal cuisine are the peal the shell of the fruits of and lay it out nicely, fruits that have seeds, oranges, longans, lichi, or mangos, all the seeds must be taken out.[7]
