Kinalas is a Bicol dish created by cooking noodle (pancit) garnished by scraped meat from pork or beef's head and other parts, enhanced with a thick deep-brown sauce coming from the brains of a cow or pig. The dish is further flavored with spices (sili and pepper) and served in hot broth. Boiled egg added is optional. The word "kalas" is the root word of "hinglas> hiningalas" and is a food term purely referring to meat preparation going back to 16th century Bicol as evidenced in Lisboa's bicol dictionary.[1] The idea originally was to separate the meat from the bones and preserve it in salt or brine.
