Centaurea gymnocarpa is a species of flowering plant in the Asteraceae family.

It is endemic to Italy. Its natural habitats are Mediterranean-type shrubby vegetation and rocky areas. While it is an endangered species in the wild, it is sometimes used in gardens as an ornamental plant.
