It is used primarily for the production of olive oil. The Cayon is highly valued for its role as a pollinator of other olive varieties. Extent and synonymsThe Cayon is particularly common in the Var region, but is also grown in other parts of southern France, and in Algeria.[1] Among the names used locally for the Cayon, are Entrecastellen, Plant d'Etranger, Nasies, Montfortaise and Race De Montfort. In Algeria it is known as Roulette de Sóumam.[1] CharacteristicsIt is a cultivar of good strength, with a spreading growth form and elliptic leaves that are short and of medium width. The olives are of medium weight, ovoid shape and asymmetrical. The stone has a rounded apex and pointed base, with a smooth surface and the presence of a mucro.[2] It is an early cultivar, and harvesting starts in early November.[3] When fully mature, the colour of the fruit is black.[2] ProcessingThe Cayon is mainly used for extraction of oil, and gives a medium yield (18–22%).[3] Oil extraction is a relatively easy process in this cultivar.[4] The taste of the oil is described as "fruity and balanced, finish with the softness of almond".[5] The Cayon can also be mixed with the Grossane for olive oil production.[6] AgronomyIt is considered a productive cultivar, with a tendency towards biennial bearing, i.e. that a good yield is followed by a weaker one the next year.[4] Its rooting ability is medium-to-high.[4] There is some disagreement over the fertility of the Cayon, though most authorities agree that it is self-sterile, and depends on the presence of other pollinators.[4] The Cayon is also highly valued for its use as a pollinator of other olive tree.[3] Among the cultivars it helps pollinate are the Olivière,[7] and the Tanche.[8] It does not show any particular vulnerability to the major pests, with the exception of the Bactrocera oleae (Olive fruit fly).[9] It is also relatively vulnerable to cold, but sustains drought quite well.[10]http://www.allaboutoliveoil.com/ References1. ^1 {{cite web|url=http://www.oleadb.it/scheda.php?name=Cayon|title=Cultivar name: Cayon|date=|publisher=OLEA Databases|accessdate=2009-01-20}} {{Olives}}2. ^1 {{cite web|url=http://www.internationaloliveoil.org/resgen/eng/Francia/PRIMARIA/Cayon.pdf |title=Cayon |publisher=International Olive Council |accessdate=2009-01-20 }}{{dead link|date=November 2016 |bot=InternetArchiveBot |fix-attempted=yes }} 3. ^1 2 {{cite web|first=Paul |last=Vossen |url=http://cesonoma.ucdavis.edu/hortic/pdf/french_olive_95.pdf |title=Olive Oil Production in the Var Region of France, 1995 |year=1995 |publisher=University of California, Davis |accessdate=2009-01-20 |deadurl=yes |archiveurl=https://web.archive.org/web/20070812154740/http://cesonoma.ucdavis.edu/hortic/pdf/french_olive_95.pdf |archivedate=August 12, 2007 }} 4. ^1 2 3 {{cite web|url=http://www.oleadb.it/detail.php?name=Cayon&table=agro&title=AGRONOMICAL%20CHARACTERS|title=Agronomical characters for cultivar Cayon|date=|publisher=OLEA Databases|accessdate=2009-01-20}} 5. ^{{cite web|url=http://www.moulinesquirol-oliveraie.com/GB/oliveraie.htm |title=The Olive Grove |publisher=Moulin de l'EsQuirol |accessdate=2009-01-20 }}{{dead link|date=November 2016 |bot=InternetArchiveBot |fix-attempted=yes }} 6. ^{{cite web|url=http://boutique.cigaloun.fr/epages/199488.sf/en_US/?ObjectPath=/Shops/199488/Products/%22Grossane%20%26%20Cayon%2050cl%22|title=Olive Oil "Grossane & Cayon" 50cl |publisher=Cigaloun Huile d'Olive & Provence|accessdate=2009-01-20}} {{Dead link|date=October 2010|bot=H3llBot}} 7. ^{{cite book|last=Courboulex|first=Michel|title=Les oliviers|publisher=Éditions Rustica|location=Paris|year=2002|pages=35–6|isbn=2-84038-635-6|language=French}} 8. ^{{cite web|url=http://www.santacruzolive.com/varietals.asp?v=tanche|title=Tanche|publisher=Santa Cruz Olive Tree Nursery|accessdate=2009-01-18}} 9. ^{{cite web|url=http://www.oleadb.it/detail.php?name=Cayon&table=bio&title=SUSCEPTIBILITY%20TO%20BIOTIC%20STRESS|title=Susceptibility to biotic stress for cultivar Cayon|date=|publisher=OLEA Databases|accessdate=2009-01-20}} 10. ^{{cite web|url=http://www.oleadb.it/detail.php?name=Cayon&table=environ&title=SUSCEPTIBILITY%20TO%20ABIOTIC%20STRESS|title=Susceptibility to abiotic stress for cultivar Cayon|date=|publisher=OLEA Databases|accessdate=2009-01-20}} 1 : Olive cultivars |
