It is a casserole of chicken pieces in tomato.[4] Pieces of chicken are first fried to a golden brown then slowly braised in a spicy tomato sauce. Peas are sometimes added to the dish, and it is garnished with shredded kaffir lime leaves as well as coriander. It is often paired with nasi tomato - rice cooked with tomato sauce or paste, milk, dried spices, and garlic, onions and ginger.[5] References1. ^{{cite web|url=https://news.google.com/newspapers?nid=1309&dat=20041007&id=sSwhAAAAIBAJ&sjid=RnoFAAAAIBAJ&pg=2704,4229122|title=Ayam Masak Merah|publisher=New Straits Times|date=7 October 2004|accessdate=23 September 2016}} 2. ^{{cite web|url=https://news.google.com/newspapers?nid=1309&dat=19960202&id=kblOAAAAIBAJ&sjid=Px8EAAAAIBAJ&pg=3673,820405|title=Traditional dishes|publisher=New Straits Times|date=2 February 1996|accessdate=23 September 2016}} 3. ^{{cite book|title=Malay Heritage Cooking|publisher=Marshall Cavendish International Asia Pte Ltd|isbn=9789814435079|page=118}} 4. ^{{cite book|title=Borneo: Sabah, Brunei, Sarawak|publisher=Bradt Travel Guides|isbn=9781841623900|page=106}} 5. ^{{cite web|url=http://m.themalaymailonline.com/eat-drink/article/ayam-masak-merah-a-celebratory-red-chicken-dish|title=Ayam Masak Merah: A celebratory red chicken dish|author=Elaine Ho|publisher=The Malay Mail|date=29 March 2014|accessdate=22 September 2016}} Further reading
