Hui Lau Shan ({{zh|t=許留山|j=heoi2 lau4 saan1|p=Xǔliú Shān|first=j}}) is a chain of dessert shops based in Hong Kong, specializing in dessert soups called tong sui, snacks and desserts. Hui Lau Shan is known for the prominent use of mango in its dishes.

History

The chain's first shop opened in Yuen Long, New Territories in the 1960s as an herbal outlet, and was known for its turtle jelly ({{zh|c=龜苓膏}}) and herbal teas ({{zh|c=涼茶}}).[1] The chain has since diversified and now emphasizes its heavily syrupped fruit desserts and snacks.[1]

Since the 1990s, the chain has expanded tremendously, with outlets in mainland China, Malaysia, the United States and Korea. In 2005, it was with the help of Danny Yeung, an entrepreneur educated in San Francisco, the same city which the chain opened its first US stall in at Geary Boulevard.[2]
